Banana Bread1 c. sugar (if your bananas are very ripe cut this down to 3/4 c.)
½ c. butter
2 large eggs
1 ½ c. mashed very ripe bananas (3 medium)
½ c. buttermilk (or add a T. vinegar to regular milk and allow to sit for 5 minutes.)
1 t. vanilla
2 ½ c. all purpose flour
1 t. baking soda
1 t. salt
Move oven rack to low position so that tops of pans will be in center of oven. Heat to 350. Grease bottoms of 2 loaf pans.
Mix sugar and butter in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk, and vanilla; beat until smooth. Stir in flour, baking soda and salt until moistened. Divide batter evenly between pans. Bake loaves about 1 hour. (If making muffins bake them for 20 minutes.) Cool 10 minutes in pans. Loosen and remove from pans and place on wire rack. Cool completely before slicing.
