Monday Meal Plan

This week we are increasing the amount of meals with meat. At my toddler's 18 month check up last week we found out he was a little anemic. He officially loves his flintstone vitamins, but I'm hoping he'll develop a taste for meat. He's just so finicky about eating meat. So that's why you'll find more animal based protein on our menu this week, and I'm planning on sneaking some spinach in our baked spaghetti. I'm definitely going to keep my eye out for some good manager specials on meat. Thankfully we were able to switch to cow's milk so that will give me a bit more money in our budget for meat. Adios soy milk!

Breakfasts:
I'm planning on making a triple batch of Lemon Yogurt Muffins
We'll enjoy some Homemade Yogurt this week.
My toddler will love it when we have Breakfast Cookies!
And I need to make up some more waffles for the freezer.
I'll probably have a couple toast days in the mix too.

Lunch:
Leftovers
Macaroni salad
Breakfast Burritos

Dinner:
Monday- Curried Chicken with Cashews, Naan & Steamed Veggies

Tuesday-Classic Baked Spaghetti, Tossed Salad & Steamed Veggies

Wednesday-Tamale Pie, Tomato Wedges & Jagger Pie

Thursday-Leftovers

Friday-Sweet and Sour pork, rice & fruit.

Saturday-I'm Hosting an Uppercase Living Party and we'll be enjoying a nice brunch complete with mini croissants w/nutella, Apple Sauce Oatmeal Cake, Lemon Yogurt Muffins, Fruit Salad, and mini breakfast casserole cups. I'm planning on serving this with some orange Julius, coffee and tea. Most of this I can prepare the during the week, which will make for easy prep Saturday morning. For dinner we will enjoy some leftovers from the week.

Sunday-Stromboli, Steamed Veggies & Fruit Salad

  1. Your plan looks great. I had to look up what Jagger Pie is, but it's not a recipe we can use (I'm allergic to avocados). :)

    I have two finicky eaters also...for example getting the boys to eat chicken nuggets or a PBJ is hard. One thing they do eat is seaweed. I steam sticky rice, then just make it like a sushi roll for them. They love it! I have found a seaweed from Korea that is not to fishy tasting and it is yummy. Let me know if you want a pack and I will get one to your mom for you. According to our dr. it is a good source of iron for them.

  5. Hey! Did you try the Jaggar Pie? Did you see that on my blog? I love it. I introduced it to all the Mennonites here and they loved it. It's good, right?
