I absolutely loved last week's freezer meals, I haven't experienced anything like that since my son was born, 18 months ago. (That cooking I owe to my hubby who prepared 15 meals for us while I was on bedrest, he's awesome.) It was a great break from cooking, since we rarely eat out. I thoroughly loved the extra time I had. I'm thinking of establishing a freezer meal week every month, but this week I am back to normal.
Breakfast:
Chocolate Chip Muffins- making this week
Waffles (from freezer)
Baked Oatmeal
Banana Crumb Muffins (from freezer)
Omlets
Lunch:
Tomatoes & Scrambled Eggs
leftovers
Ham & cheese
Snacks:
The only out of the ordinary thing we will have this week will be Homemade Pretzles. I'm making a few for my hubby's lunches this week, I'd score bonus points if I added some processed cheese dip too (I'm not a fan, but he loves it).
Dinner:
Monday-Chicken Packets, Asparagus & Sweet Potatoes
Wednesday-TX Cowboy Pie (using up leftover Roast)
Thursday-Tuna & Rice Souffle & Steamed Carrots
Friday-Spaghetti alla Carbonara, Tossed Salad & Steamed Broccoli
Saturday-Leftovers
Sunday-Simple Risotto, Steamed Mixed Veggies & Fruit
Check back on Thursday to find the recipe for Tuna & Rice Souflee and Spaghetti ala Carbonara. For more great meal plans visit Org Junkie.
