A Filling Breakfast


Wow, this really fills you up, and I didn't even have very much. I love it when I find breakfasts that really tid me over till lunchtime. I'm really trying to watch my calories and have been trying not to snack in the morning, this breakfast does the trick. ENJOY!


Baked Berry OatmealSERVES 6

Ingredients:
4 tablespoons butter, melted
1/2 cup or less brown sugar
2 egs
1 cup applesauce
1 1/2 cups milk
3 cups quick oats or regular oats
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup berries of your choice, I used strawberries
brown sugar or honey
milk


Directions
Melt butter in 9x9 baking dish, then add brown sugar, eggs, applesauce and milk. Wisk together until everything is well blended. (I used a deep dish casserole dish since I broke my 9x9 recently, sniffle.)

In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add your berries. This may be placed in refrigerator overnight.

Bake in a 350 degree oven for 35 minutes. (Bake 5-8 minutes longer if refrigerated overnight.)
Cut into squares. Top with brown sugar or honey, add a bit of warmed milk and enjoy.


I'm wondering if this could be done in the crockpot overnight? I might have to try this because I'm all for easy breakfasts.

  5. You'll have to let me know if it works in the crock pot. I've tried oatmeal in a crock pot twice and was not too impressed either time. It looks really good! My FAVORITE way to make oatmeal is with peaches ( I guess I really am a Georgia girl now!). Have you tried that yet? Yum!
